These no-bake energy bites are packed with the natural sweetness of dates, combined with nuts and seeds for a healthy, delicious snack.
Ingredients:
- 1 cup pitted dates (Iranian or Majdool dates)
- 1/2 cup almonds (or your favorite nuts)
- 1/4 cup walnuts
- 2 tbsp. chia seeds
- 2 tbsp. unsweetened cocoa powder (optional, for a chocolatey flavor)
- 1/4 cup shredded unsweetened coconut (plus extra for rolling)
- 1 tbsp. ghee or coconut oil (optional, for binding)
- 1/2 tsp vanilla extract
- A pinch of sea salt

- Blend the ingredients: In a food processor, combine dates, almonds, walnuts, chia seeds, cocoa powder (if using), shredded coconut, vanilla extract, and sea salt. Pulse until the mixture forms a sticky dough.
- Adjust consistency: If the mixture is too dry, add 1 tbsp. of ghee/coconut oil or a few drops of water and pulse again.
- Form the bites: Roll the dough into small balls (about 1 inch in diameter).
- Coat with coconut: Roll each ball in shredded coconut for an extra touch of texture and flavor.
- Chill: Place the energy bites in the refrigerator for 30 minutes to firm up.
