Date and Nut Energy Bites Recipe!

These no-bake energy bites are packed with the natural sweetness of dates, combined with nuts and seeds for a healthy, delicious snack.

Ingredients:

  • 1 cup pitted dates (Iranian or Majdool dates)
  • 1/2 cup almonds (or your favorite nuts)
  • 1/4 cup walnuts
  • 2 tbsp. chia seeds
  • 2 tbsp. unsweetened cocoa powder (optional, for a chocolatey flavor)
  • 1/4 cup shredded unsweetened coconut (plus extra for rolling)
  • 1 tbsp. ghee or coconut oil (optional, for binding)
  • 1/2 tsp vanilla extract
  • A pinch of sea salt

Instructions:📝

  1. Blend the ingredients: In a food processor, combine dates, almonds, walnuts, chia seeds, cocoa powder (if using), shredded coconut, vanilla extract, and sea salt. Pulse until the mixture forms a sticky dough.
  2. Adjust consistency: If the mixture is too dry, add 1 tbsp. of ghee/coconut oil or a few drops of water and pulse again.
  3. Form the bites: Roll the dough into small balls (about 1 inch in diameter).
  4. Coat with coconut: Roll each ball in shredded coconut for an extra touch of texture and flavor.
  5. Chill: Place the energy bites in the refrigerator for 30 minutes to firm up.

Tips:

  • Store in an airtight container in the fridge for up to 2 weeks.
  • Customize with other add-ins like flaxseeds, dried cranberries, or dark chocolate chips.

These date and nut energy bites are perfect for an on-the-go snack, pre-workout fuel, or a healthy dessert!💪
